Winter Coleslaw with SPARKLE!

Here in New Zealand, the temperatures have dropped. The first day of winter, June 1st on the meteorological calendar, was true to form. Cold, windy, wet.

Warmer clothes are needed to protect our bodies from the cold, and for me to start wearing my bed hat. No joke! This simple soft hat is like a piece of armour, protecting my head from the cold night air. There’s another winter we all live in – and that is the dying of this world, combined with the winter of spirituality.

The love of many waxes cold, (read Jesus’ talking about this time in Matthew 24:12) and millions perhaps even a billion simply have no spiritual thoughts or beliefs. And then the millions or a billion sincere believers caught up in pagan religions and pagan Christianity, worshipping on the veritable day of the Sun - Sun Day, and millions or perhaps a billion barely getting through each day with enough food and shelter to avoid sickness, violence and death.

For we live in the end times of this version of Planet Earth, and there are stupendous events happening around the world: Climate change revolution, increasing weather events whether man made or natural, extreme political strategies and strange appointments of prime ministers and presidents, civil wars, and earthquakes multiplying daily, discord among people of same faiths, and very interestingly the goals of the current Roman Catholic Pope, Pope Francis are being taken seriously and applied by governments, businesses, and even the churches known as Protestant churches.

Winter of our World

These events are Signs of the Times – but we must always remember that Jesus Christ, the only begotten Son of God told us that these Signs of the Times are the BEGINNING of sorrows. In other words, there are many more to come. Then Jesus gives us a wonderful promise to all of us who want to understand, and seek comfort, “But he that shall endure until the end, the same shall be saved.” Matthew 24:13

We can endure to the end in just the same way as I put on my soft winter hat. We put on the “whole armour” of God found in Ephesians 6:10-18. We can spend time reading God’s word and praying daily.

Winter Where we Live

Hearts and minds looking to Jesus, we need to eat and live and be willing to be the healthiest we can be. What we put in our mouths to eat and drink is one of the major causes of disease on this planet. If you are like me, you like to think and pray about the food you prepare for yourself and maybe you have a family to cook for too. 

Here today, I have a Winter Coleslaw recipe for you. This new place where we live doesn’t get very cold, maybe minus 5° Celsius (23° Fahrenheit). And the average temperature doesn’t get much lower than 5-7°C (41-45°F). Wind, rain and morning frosts, but rarely any snow.

BUT, talk to anyone from Europe, the UK or the United States and the first thing they will tell you about New Zealand in the winter is, “There is no central heating!” If you’re in the UK, you might say, “No radiators!”

And they would be correct. In New Zealand homes, usually only the main living area is heated.

So, you can understand why a lot of New Zealanders, might prefer NOT to eat a cold salad in winter. In our house, three people work outside in all weathers. Cold, rain, hail, or winds are not reasons to stop working in New Zealand. Except she says, in a little voice, me!

And I do have a simple secret which seems to make Winter Coleslaw SPARKLE in our house!

Secret to Winter Coleslaw SPARKLE!

Would you like to know my little SECRET? Once the vegetables are all sliced, grated and diced in a bowl,  simply add a little citrus juice or best quality apple cider vinegar into a small cup. (If your body is happy with lemon or other citrus juice choose this first – but I cannot digest any fruit or citrus at all without problems.) Add a little water to the juice or apple cider vinegar, then add a few drops of liquid stevia, or a teaspoon of some other liquid sweetener. Whisk it up in a little cup, then pour over the salad. Taste the SPARKLED Coleslaw and see if I am right or wrong. For my family, the icing on the cake is literally the Mayo on the Coleslaw!

 

RECIPE: Winter Coleslaw with SPARKLE!

Makes enough to feed four generously, or more people for a side dish

  • 500g or about 1 lb (pound) of green or red cabbage (or both)
  • 1 large or 2 medium sized carrots (more carrot for a winter lifting orange glow)
  • 1 small onion chopped very finely OR 2-3 large spring onions finely chopped
  • Optional – other assorted vegetables, a finely grated small beetroot, 2-3 finely chopped young kale leaves. Some people like a handful of raisins or a sprinkle of toasted sunflower seeds.

Wash all the vegetables gently and lovingly with fresh water, I hope you are able to use filtered or non-chlorinated water for your health’s sake.

Slice very finely, or use a mandolin or a food processor the cabbage. Next finely grate the carrot. With very clean hands toss cabbage, carrot, onion or spring onions and any other vegetables in a nicely open bowl.  I like this tossing step and find it very relaxing and satisfying.

SPARKLE:

  • 2 Tablespoons of citrus juice or Apple Cider Vinegar (see above)
  • 2-3 Tablespoons of water
  • 3 drops of pure stevia liquid OR 1 tsp of other liquid sweetener or choice. A teaspoon of honey might be nice, or rice syrup, or date puree.

Mix the SPARKLE ingredients with a fork and sprinkle over the coleslaw in the bowl and toss again.
